Every piece of good news comes in a box.

In Bengal you share good news by sweetening someone’s mouth. A new job, a wedding date, exam results: someone goes out for a box of mishti. We still pack every one by hand and tie it with string.

On the counter today

Twelve sweets, made this morning. Prices are illustrative: this is a fictional shop.

Why the sign says “& Daughters”

Three generations in one shop, and the sign repainted once.

A hand sets the last square on a stack of layered barfi.
  1. 1948Haripada Kundu opens a one-room shop with a single iron karai and his mother's recipe for rosogolla.
  2. 1979His daughter Malati takes over the kitchen, carves her first sandesh moulds and repaints the sign: Kundu & Daughters.
  3. 2009Malati's daughters, Rina and Tuli, start the festival boxes and the wedding trays.
  4. TodayStill one shop and still the same karai. The milk arrives at four every morning.

The Kundu family and its history are fictional. This is a concept website.

Before the city wakes

Chhena is kneaded by the heel of the hand for twenty minutes. Nobody has found a machine that does it better.

  1. 4:00 am

Milk arrives from Nadia and goes straight into the karai.

  2. 4:40 am

It is split with lime and the chhena hangs in muslin.

  3. 5:15 am

Kneading, rolling, four hundred rosogolla by hand.

  4. 6:30 am

The first tray reaches the counter.
